Pan Fried Oyster Mushroom

This Pan Fried Oyster Mushroom is tender, chewy and flavourful yet retaining its natural aroma . A quick dish to prepare and can be one of your favourite appetiser or side dish.

Mushrooms are the nutritious addition in our diet that’s meaty in texture and taste amazing and good thing is, it’s Vegan. The oyster mushroom is one of the more commonly sought wild mushrooms, though it can also be cultivated on straw and other media. I remember that in my paternal grandparents house, Oyster Mushrooms were cultivated widely on a straw with the natural fertiliser of cow manure. It used to taste absolutely delicious, chewy, nutty and earthy flavour which I couldn’t find in the store bought Oyster mushrooms that is cultivated commercially.

Oyster Mushrooms are known for their impressive health-promoting benefits and contain a variety of powerful nutrients. They’re loaded with fiber, vitamins, minerals and are low in carbohydrates. They provide antioxidants and promote heart health by reducing heart disease risk factors like high cholesterol and high blood pressure. But care must be taken while picking up wild Oyster mushrooms which may be poisonous and can be quite detrimental to health. Best option is to get it from the farmers market.

I had paired the Pan fried Oyster Mushroom with Rice, salad & a sunny side up which is a complete balanced meal.

So without delay let’s head to the recipe which can be prepared in no time. The only thing about Oyster Mushroom is that it’s delicate and care must be taken while cleaning it. The Oyster Mushrooms are not to be washed vigorously under running water instead should be cleaned in a bowl of water and pat dry it with a kitchen towel for pan fry or shred it with fingers for stir fry.

Ingredients:

• 200 gms of Fresh Oyster Mushroom washed and pat dry with a kitchen towel.

• 1 tbsp Olive oil

• 1 tsp Butter

• 2 Stalks of spring onion chopped

• 2 green chillies chopped (optional)

• 1/2 tsp crushed garlic

• 1/4 tsp crushed ginger

• 1 tbsp Light soya sauce

• Crushed peppercorns

• Chilli flakes

• Coriander leaves

• 1 tsp Lime juice

• Salt to taste

Instructions:

• First gently wash the oyster mushroom in a bowl of clean water and pat dry the mushroom with the kitchen towel.

• Now in a frying pan heat olive oil and butter, add the Oyster mushrooms and fry it in medium to high heat for 3 to 4 mins. Gradually add the chopped white part of spring onion and green chilies along with the crushed ginger garlic. When the herbs and spice gets aromatic fry the mushroom in low to medium heat for 5 to 6 minutes without disturbing. Do not cover lid.

• Now drizzle the soya sauce, turn over the mushrooms and let it cook for another 5 minutes until it becomes golden brown.

• Add lemon juice, crushed peppercorns, salt to taste and stir well. Garnish with green spring onion & chopped coriander leaves. Serve immediately.

Note:

Mushrooms tend to be soggy and lose it’s texture when prepared ahead of time. So it’s best to fry it just before serving.
