This delicious and moist Orange cake with the wholesome Almond meal is incredibly soft and melt in mouth in every bite. This’ll undeniably be your ultimate favourite Orange flavour cake.

Citrus cakes have always been my favourite. The distinct aroma of Oranges, lime or lemon gives the comforting touch to my senses. Citrus cakes are light and the delicate taste and texture are great as an after meal dessert or a treat with a cup of tea or coffee.
This Almond meal Orange cake is surely a crowd pleaser. Along with the zesty orange flavour the nutty almond meal makes the cake more desirable and one slice won’t be enough.

Here I’ve used Malta Oranges which is flavourful, juicy and is sweet enough with a hint of sour taste. In my earlier Orange cakes I had used Mandarin oranges. Compared to Malta orange, Mandarin oranges are small in size, more sweet and the peel is soft. Malta orange on the other hand is larger in size, taste sweet and tangy and the outer layer is hard. It’s easier to zest whereas it’s always better to peel the white under layer of the orange, otherwise it may leave a bitter taste in your cake.
A simple no fuss recipe with basic ingredients and easy to follow, this Almond meal Orange cake will be your ultimate favourite. Make it ahead of time, this will stay perfect & moist for 3 days in room temperature and last upto a week in refrigerator.


Ingredients:
Almond Meal Orange Cake
▪️ 1 cup almond meal
▪️ 1/2 cup all purpose flour
▪️ 2 eggs
▪️ 50 gms butter
▪️ 1/4 cup vegetable oil
▪️ 2 oranges (Malta)
▪️ 1/2 tsp baking powder
▪️ 1/8 tsp baking soda 1 cup
▪️ 3/4 cup white sugar
▪️1/2 tsp vanilla extract
▪️ 3 tbsp milk
Method:
In a bowl zest the oranges and keep aside. Then peel the white under layer of the oranges. Cut the oranges in half and get rid of the seeds. Now in a food processor blend the cut oranges into a purée.
In a bowl, whisk the butter & sugar until fluffy, gradually crack eggs and beat until smooth and foamy. Add oil, orange zest, vanilla extract and whisk further. Now add the orange puree and beat again until smooth.
Sift in the flours, baking powder & baking soda and salt. Incorporate the dry ingredients in the wet mixture. Add milk and fold it to a smooth batter.
Now pour it in the 6 inch lined baking pan.
Bake it in the preheated oven of 170 degree Celsius for 40 to 45 mins.
When the cake is done and the wooden skewers inserted comes out clean, let it cool in the pan for 5 mins and then transfer it into the cooling rack.
Ingredients:
Orange Vanilla Icing glaze
▪️ 1/2 cup icing sugar (confectioners sugar)
▪️ 1/2 tsp orange zest
▪️ 1/2 tsp vanilla extract
▪️ 2-3 tbsp milk
In a bowl add the sifted icing sugar, orange zest, vanilla & milk. Mix it well. Drizzle it over the cake. Cut the cake in slices and enjoy.
