This hearty Chicken Spaghetti is a quick and easy meal for any busy days or weeknights or lazy weekends. With the freshest of ingredients combined, it’s a healthy and delicious meal that kids and adults will enjoy and definitely will ask for more. The juicy tomatoes, fresh spinach & basil, lots of garlic and minced chicken can never go wrong and creates one of the tastiest sauce with a pasta.

I love pasta with the fresh ingredients where you can get the best saucy texture and the taste is simply delicious and refreshing. The minced chicken in the recipe can be replaced with any meat or seafood of your choice as well as mushrooms or veggies like eggplant, zucchini etc can easily make it to a higher quality of complete meal.
Do not shy away from adding lots of garlic, this surely elevates the flavour of the pasta along with butter and olive oil.

Adding dried Italian seasoning, chilli flakes & extra crushed peppercorns brings out the taste and the heat and so much of flavour.
Before serving, add grated Parmesan and chopped basil leaves to bring out the oomph in the dish.

Ingredients: (Serving 4)
✔️ 300 gms Minced chicken
✔️ 200 gms spaghetti (dried)
✔️ 1 onion (chopped)
✔️ 6-7 cloves of garlic
✔️ 200 gms spinach
✔️ 4 medium tomatoes
✔️ Handful of of basil leaves
✔️ 1 cup fresh chicken stock/ 1 cube chicken stock
✔️ 2 tbsp tomato paste
✔️ 50gms butter
✔️ 1 tbsp olive oil
✔️ 1 tsp Italian seasoning
✔️ 1 tsp dried oregano
✔️ 1/2 tsp chilli flakes
✔️ 1 tsp crushed peppercorns
✔️ 1/2 tsp brown sugar
✔️ Salt to taste
Instructions:
Heat water in a pot in high flame, add few drops of oil & salt and boil the spaghetti until al dente. Drain and reserve the water. Keep aside the cooked spaghetti.
In a pot, blanche the tomatoes for 8 minutes, drain and take out the peel. Purée the tomatoes and keep aside.
In a separate pot, blanche the spinach for 3 to 4 minutes, drain and keep aside.
In a frying pan add butter & olive oil. Add chopped onion, crushed & chopped garlic. Stir for a minute and gently add the minced chicken. Add salt to taste and cover & cook in low to medium flame until the excess water evaporates and chicken is tender.
When the chicken is cooked add the puréed tomatoes, blanched and chopped spinach, Italian seasoning, oregano, chilli flakes, chicken stock and a cup of pasta water. Cover & let it simmer & cook for 8 to 10 minutes in low to medium flame. Now add the basil leaves & brown sugar. Stir for a minute. Add crushed peppercorns and adjust with the salt.
The gravy must be thick and juicy enough to hold the spaghetti.
Transfer the Chicken spinach spaghetti into a serving dish, add grated Parmesan and chopped basil leaves. Serve hot
