Watermelon Mint Feta Salad with Balsamic Vinegar dressing is a Summer delight. The delicious gourmet Watermelon Feta Salad that we eat in the restaurants or cafés is actually a super easy recipe that you can make it in no and once you make it, there’s no stopping you from making it more on any occasion or as lazy and healthy snacking.

Summer is at it’s peak and watermelons, mangoes, peaches and cherries are flooded in the market. So before monsoon rains hits us, why not to make this delicious summer watermelon salad with the freshest of ingredients and with finest & delicious Modena Balsamic vinegar! However, if you don’t have balsamic vinegar in your pantry, worry not, you can add a squeeze of lime, it’ll still taste good.

I haven’t used over the top ingredients but only the basic that I had in my pantry. I had only purchased Feta cheese from the market just to make this Watermelon salad.

The fresh mint brings out the flavour, sweetness and the subtle cool sensation in the already sweet watermelon. The crushed peppercorns balances the sweetness and tanginess of balsamic vinegar with it’s heat. And the salty Feta goes perfect to bring out the taste and texture of the salad.

Lets head to the recipe without delay!

Ingredients: (Serves 3)

▪️ 1/2 Watermelon

▪️ 1/4 cup fresh mint leaves

▪️ 2tbsp Balsamic Vinegar (Modena)

▪️ 1 tbsp Extra Virgin Olive Oil

▪️ 1 tsp crushed peppercorns

▪️ 1/4 cup crumbled Feta

▪️ Salt to taste

Method:

In a deep dish scoop out the watermelon into small balls or simply cut the watermelon in small chunks. Chop the mint leaves and sprinkle it on watermelon melon.

In a small bowl, mix together olive oil, balsamic vinegar, salt, and black pepper to create a dressing.

Pour the vinaigrette dressing on top of the watermelon and toss gently.

Now crumble feta on the Salad and stir gently. Serve it fresh and cold.

Notes: It’s best to use cold watermelon straight out of the refrigerator before preparing the Salad. The leftover Salad can be stored in the airtight container for a day. It’s always best to consume any salad fresh.
