Golden, crispy, and utterly delightful, these panko-crusted potato & cottage cheese patties are the crunch you didn’t know you needed in your tea time or on breakfast. It’s easy to prepare with almost all the pantry available ingredients and once you make it, your family and friends will definitely be a fan of it.

The Panko bread crumb is the only ingredient that you might need to get it which gives the extra texture and crispy crust in the patties.
Panko are a Japanese breadcrumbs and is widely used in Japanese cuisine. Panko and breadcrumbs are both made from bread, but the main difference is that panko is made from steamed, crustless bread loaf whereas breadcrumbs are made from traditional bread loaf. While panko and breadcrumbs can both be used as a coating for any fried foods, panko is flakier and yields a crispier texture.
So it’s upto you which breadcrumbs that you would like to use. Both are easily available in the supermarket, Amazon or any online grocery store.

I’ve added egg in the recipe: however, if you’re a vegetarian, you can skip the egg. Adding egg gives the structure and taste in the patties.
