Ingredients: (Serves 2–3)
• 300 g baby potatoes (parboiled with skin on)
• 8-10 strips bacon
• 2 tbsp olive oil or bacon fat (for frying)
• 1 medium onion (thinly sliced)
• 4-5 garlic cloves (minced)
• 1-2 dried chillies (chopped)
• ½ tsp crushed black pepper
• ½ tsp smoked Kashmiri paprika (optional, for extra flavor and colour)
• Pinch of turmeric powder
• Salt to taste
• 3-4 spring onion greens (chopped, for garnish)
Method:
- Prep the potatoes
• Wash baby potatoes thoroughly and parboil them until just tender (not mushy).
• Drain and peel the potato skin. Cut in halves and keep aside.
2. Cook the bacon
• In a pan, cook bacon strips on medium heat until crispy.
• Remove bacon and set aside, leaving some fat in the pan.
3. Fry the potatoes
• In the same pan, add olive oil on the bacon fat.
• Add sliced onion and garlic, stir-fry until caramelise.
• Add baby potatoes, chopped red chillies, turmeric powder and pan-fry on medium-high heat until golden and crispy on all sides.
• Season with black pepper, smoked paprika, and a touch of salt if needed.
• Cut the bacon strips into small pieces with a kitchen scissor or knife. Toss the crispy bacon back into the pan. Mix well.
• Garnish with fresh spring onion greens.
• Serve hot as a side dish or enjoy with a plate full of salad.
Notes: Instead of bacon, you can add chicken sausage or mushrooms for extra protein and umami flavour.
