This one bowl Banana Oats Nutella Muffins are soft & delicious, flavoured with Cinnamon & vanilla and the brown butter in it makes it irresistible. Perfect for breakfast, evening snacks or for quick snack, you’ll definitely ask for more of these eggless muffins.

Baking something sweet on Friday’s have become a ritual for me. This started with my little man’s after school snack routine. I try to stick to something quick, easy and healthy bakes which the child loves and I could enjoy guilt free as well.
Initially in the morning I was thinking of baking banana oats chocochip muffins. But due to the lesser quantity of choco chips I had, I combined the Nutella into the muffin batter and sprinkled the choco chips on top. It turned out to be double tasty and yum.



It’s an easy and a quick recipe that can be whipped within few minutes and the baking time will hardly take 20 minutes for those gorgeous muffins.
Ingredients: (6-7 muffins)
▪️3 small overripe bananas
▪️ 1/4 cup brown sugar
▪️70 gms of melted brown unsalted butter
▪️3/4 cup all purpose flour
▪️1/2 cup rolled oats
▪️2tbsp Nutella
▪️1/8 tsp baking soda
▪️1/4 tsp baking powder
▪️Pinch of salt
▪️3 tbsp buttermilk
▪️Drizzle of vanilla extract
▪️1/8 tsp cinnamon powder
Method:
▪️Heat the butter in a pan, stir it for a minute, do not overheat the butter or else it’ll be burnt. Let it cool.
▪️Mash the bananas, add brown sugar and vanilla extract, whisk until smooth.
▪️Now add the brown butter into the banana mixture. Whisk well.
▪️Sift the flour, baking powder, baking soda, salt and cinnamon powder. Combine and fold into the banana mixture.
▪️Add the rolled oats and stir until combined. The batter will be of thick consistency now.
▪️Now pour the butter milk over the batter and gently fold it to a thick yet smooth consistency.
▪️Add the Nutella into the batter and gently fold it together.
▪️Divide batter evenly into the lined Muffin tray, drizzle few dusted choco chips on top of the muffin batter.
▪️Bake it in the preheated oven of 170 degree Celsius for 20 mins or until tooth pick inserted comes out clean. Enjoy warm or cold.
Notes: These muffins could be stored in a room temperature for up to 3 days.
